with walnuts & dark chocolate chunks
4 overripe bananas
100g muscavado sugar
4 Tbls maple sirup
1 tsp fleur de sel
100g whole grain flour
1 tsp baking powder
50g walnuts, coarsely chopped
50g dark chocolate, coarsely chopped
Peel the bananas, place them in a small bowl. Add 2 tablespoons of maple sirup, then smash them with a fork until you get a puree.
Place the butter and sugar in the bowl of your kitchen machine and beat until the mixture is fluffy and lightens up.
Add the eggs one at a time and beat. Scrape down the sides of the bowl as needed.
Take the bowl of the machine, then add the banana and mix well. Mix flour, salt and baking powder and add to the dough. Fold in with a wooden spoon, just until combined, don´t overmix the dough.
Scrape the batter in a buttered mold and bake for about 40 minutes at 180°C.
Take out the oven and glaze with the 2 remaining tablespoons of maple sirup.
